White wine sauce too acidic

    I'd add a dollop of tomato puree when you reduce it, and a pinch of sugar.
    Have done osso bucco in white wine with pork myself (this one was Nigella's!) and it was delicious.
    Or add a good half pint of chicken stock before reducing it.
