Veggie meal ideas for Winter

    Lentil soup served with bread would make a good starter
    or even a lunch time meal.

    Peppers stuffed with a vegetable rice mixture makes an interesting dish.
    This could be served with mashed potato.

    Pumpkin is a useful ingredient to use in curry which could be served with rice and nan bread,

    I often make aubergine pasta. Cut aubergine into small pieces and fry, add to a tomato sauce of onion, garlic, tin of tomatoes and chilli. Serve with spaghetti.

    Hotpot.

    several onions
    third tray of mushroom
    sliced potatoes [I got these frozen from morrisons]
    veg oil
    flour
    gravy black
    veg mince
    chop and fy onion and mushroom, add mince fry a bit more, add 1 spoon flour, mix, add some water, about a cupfull, cook til thick. Add gravy black, [not too much], pour into dish, cover with sliced potato, sprinkle a little oil on these, cook in oven.

    Can also be done with veggi chunks.
    NOTE: if using your own potato, from scratch, either fry off first, or part boil, otherwise potato will go black.

    Did that one last night, had with peas. Most enjoyable.


    I also do:
    veggie cury with or without chunks, always with beansprouts. you can add either lentils or chick peas to this one too [tinned are good]
    Goulash, I always use a mixture of sweet and smoked paprika for this
    Cottage pie
    Mince stew and dumplings
    Chunky stew and dumplings
    Chilli
    Lasagna, I always have one layer with a good sprinkle of nutmeg

    Suet pastry pies or short pastry : chicken chunk and mushroom, chicken chunk and leek, mince and potato
    Sausage meat and egg [I get the sausage meat from the local veggi shop, its cheaper]

    Vegetable broth with plenty of pearl Barley
    Vegetable soup [small chunk, not liquidised]

    Curried chick peas and rice?
    Spinach and rice with a lentil dhal
    Red lentil soup
    Macaroni cheese
    Ooooh home made rice pud (obviously not for a main)... yum...

    Nigella did an interesting veggie morrocan inspired dish last night.

    Tonite, was
    Veggie sausage toad in the hole
    Mashed potato
    carrots
    peas
    and veg gravy

    I used to do veggie curries which were lovely but ended up vast as I kept on adding more and more ingredients.

    Loving veggie soups at the moment. Red pepper and tomato with chili, and spinach (different soup) are favourite

    Roast vegatable soup with pretty much anything in the fridge popped in the oven with garlic an onion, olive oil and some bullion stock then blended can be lovely and warming with some warm crusty bread.

    Chilli sin carne is good, also huge trays of different veg drizzled with olive oil and roasted.

    True, lapinrose, but what do you have with them? Roast vegetables are not a meal in themselves.
