veggie lunch ideas

    I love asparagus and peanut quiche. Yes, sounds odd but works. Use unsalted peanuts in shells (shell them first!) and add to a quiche base with a lovely eggy, creamy filling and fresh poached asparagus.

    Lay out a sheet of puff pastry. Trim the edges off to give a clean edge all round. Score lightly around the edge about 5cm in, so it looks a bit like a picture frame.

    Cover the middle with some cooked, well drained spinach seasoned and flavoured with nutmeg, could add spices like cumin or coriander, could add pine nuts,sultanas, fried onions etc. Crumble a bit of ricotta over.

    Bake in a hot oven - the edges will puff up around the spinach in the middle.

  4. One of my favourite veggie dishes is Ottolenghi's 'Honeyed Sweet Potato with Spiced Spinach and Chickpea Stew with Garlic Yoghurt Sauce'.
    It's stunning and what I often make for myself when Mrs909 is out (she hates sweet potato and chickpeas).

    I'd do it with chargrilled aubergines and a rocket salad on the side.

    That is a gorgeous dish - I make it when eldest cosmos comes to visit as it's his favourite.
