Veggie Christmas Sandwiches

    We're having a fun time reviewing the Christmas Sandwich offerings in the Science Workspace on a Friday lunchtime. However, after her 3rd brie and cranberry sauce sandwich our sole veggie scientist is suffering somewhat. Its my turn to get the sandwiches next week - so I thought I might make my own veggie offering - any suggestions?

    Egg mayo? Cucumber and cheese?
    Sorry, just thought, do they need to be fancier?

    Boursin, lettuce and lots of black pepper in crusty rolls is nice.

    PC Jr spoke highly of a roast squash, chestnut and a little cranberry mix she had somewhere.

    Roasted veggies and humous. If possible roast your own veg mix - onions, garlic, tomato, pepper, sweet potato - in olive oil.
    Or you can leave the tomatoes and pepper unroasted for added crunch.

    We buy Quorn turkey at Christmas (or their turkey slices) so that the veggies can enjoy the trasitional boxing day sandwiches.

    Sorry but at Christmas brie or roast veggies with humus just don't do it. It has to be turkey, stuffing and cranberry.
