My Spanish is OK but no more than that. I can understand a lot more than I can say but I want to improve and build my confidence and fluency at the same time. Thought a good way might be to do a course in Spain for a couple of weeks this summer. Does anyone have anything they can recommend or, alternatively, other good ideas for achieving the desired effect?

You could always throw yourself in at the deep end and try to get a work experience placement in Spain. Working in somewhere like a shop with native speakers as colleagues and customers really will bring on your skills.
Most of the placement companies specialise in students (A level /undergrad) but I'm sure they could be persuaded to help you out
