Small pork shoulder

    Hello everyone,

    I've been given a small (700g) boneless pork shoulder joint which I want to cook tomorrow. I know it's best when slow-cooked but does anyone have any top tips/ timings/ recipe ideas to make it even more delicious?

    Make a dry rub with fennel seeds, peppercorns and sea salt ground in a pestle and mortar. Slow roast for 6 hours at 160C. Add the potatoes for the last two hours, for the last hour add whole shallots, garlic cloves, pieces of carrot and chopped butternut squash, for the last half an hour add pieces of pear.

    This is a Lorraine Pascale recipe. It always impresses and is all done in one roasting tin!

    Pears are so underused in this country!
