Quick spontaneous ideas please

    I've been cooking crispy duck this evening, unaware that the 2 cucumbers Tesco kindly delivered at the weekend has now been reduced to a piece of around 2", mostly, I suspect to feed the rabbit. I need an urgent substitute.
    The fridge has courgettes, aubergines, asparagus and various salad components and there is a jar of gerkins in the pantry.
    What do you think might work?
