Pork tenderloin

  1. I have a pork tenderloin and I wanted to cook something healthy with some spicyness!

    I was thinking layer of rice at the bottom of a baking dish with peppers and carrots and broccoli then cover with water to cover the rice then layer of spicy seasoned pork over the top.
    cover with foil and bake in the oven.
    Will this work? What do you think?

    Don't see why not, Rob.
    Bit like a biryani or a pilaff, kind of.
    I'd add some more flavour to the rice element by frying onions and garlic, with spices, then mixing these with the rice before layering etc. I'd probably use stock rather than rice.
    Let us know how you get on.
