I’ve been out of the teaching industry for more than 6 years now and on top didn’t complete my NQT. Could I just continue to do supply for now until my children grow up?

You will need to complete your NQT year if you want to teach in a state school, but there is no harm in speaking to a supply agency and asking the question! Otherwise, perhaps you could consider an HLTA role?

I'm looking forward to the day when I haven't taught for 6 years.

If you haven’t completed your NQT year any supply you do has to be for at least a term so that it counts towards it. You can probably get day to day agency work as a TA or as a cover supervisor , but not as a supply teacher.
