Left over coconut milk

    There is always some coconut milk left over. I currently have a third of a tin which isn't needed in the recipe.I usually stir it into soups and porridge. What else can I do with it?.

    Make rice pudding !

    It goes well with anything you'd normally use milk for - custard etc. You could put it in a smoothie or milkshake, or freeze it in an icecube tray and use it in iced coffee or tea (or just keep it for next time you only need a small amount),

    I just put it in a plastic bottle and into the freezer, for next time. Sometimes a whole tin is just too much for one meal's requirements.
