we have been using Adobe Dreamweaver CS5 but need to update our software to be able to create html5 documents and animations.
    Can anyone recommend anything reliable.

There's no reason why you can't still use Dreamweaver if you use the Code View for the newer bits - paragraphs, title, images, DIVs, etc are all still the same (except that you need to style everything with CSS rather than using things like width and height attributes in the HTML tag). I was doing HTML5 in Dreamweaver MX 2004 until recently!

Microsoft Expression Web does HTML5 and CSS3 (draft) if you want to change - it's quite similar to Dreamweaver, but is free so the students can practise at home.

Microsoft expression gets my vote - free and easy to use the different views for different abilities.
