Green/Wet Walnuts - got any ideas?

  1. My friend has a glut of walnuts from her tree and I spent a happy day filling up carrier bags with them. We've only scratched the surface of what's there and we've got 5 carrier bags full.
    I was going to pickle some but unfortunately the shells have started to form so I can't do that.
    I'm going to make some Liqueur de Noix (green walnut liqueur) but I can't possibly use up all of the walnuts for that else I'll get into trouble with HMS Custums and Exise.
    Which all leaves me a bit stumped! Yes, I'm going to dry some out to eat as 'normal' and I've trawled the internet hoping for ideas but the only ones are pickle and liqueur.
    Any suggestions?
