I don't mean celebrity chefs. I mean the rare and wonderful cookery writers who've really taught you something about methods and traditions. I'll nominate two, knowing that there are many more.

    Julie Salmi

    Edouard de Pomiane

I love reading Nigel Slater and Nigella Lawson - they both convey a real love of food.

I agree about Nigel Slater and Nigella. I loved Jane Grigson's writing too.

But for clear teaching of methods I rate Prue Leith and Delia.

Nigella and Simon Hopkinson are my favourites.

    Must look him up.

De pomiane was the person who thrilled Elizabeth David by using the phrase 'a **** of butter the size of a walnut'. Look him up. He was not a chef but a scientist at the Institut Pasteur. He had a cookery programme for years on a French radio station, and was much loved.

Sorry that is disgusting. Why do we have to be ruled by foreign vulgarity? The word is ****, which is a perfectly respectable word. How smutty can you get?

I really hope I don't get a rap on the knuckles for that. It would be most unfair.

Echoing Hopkinson, Slater, Lawson and Pomiane, but adding:

    Claudia Roden
    Madhur Jaffrey
    MFK Fisher
    Harold McGee
    Marcella Hazan
    Fergus Henderson
    Alice Waters
    Darina Allen
    Skye Gyngell
    Elizabeth David
    Richard Olney

And I'm sure there are others!

I love reading Claudia Roden's books, so many wonderful stories among the recipes. In fact I like reading cookery books, as books rather than recipe sources.
