Great British Chefs

  3. This is probably heresy, but I confess to becoming bored with the cult of "The Great Chef". It's your job! We don't have a Great British Waiter/ess do we? No, we expect the waiting staff to get our order right, deliver the food competently with a smile, respond politely to the most ridiculous requests, take appalling abuse at times, smile while getting our bottoms fondled, answer the phone, greet customers, hand out the bills without making us wait all while being understaffed, woefully underpaid and overlooked.
    Well I expect anyone paid to cook for me to do so with care and with the best available ingredients all without expecting to be treated like a celebrity.
    I have cooked and waitressed - I can tell you it is far harder front of house. Chefs cook and poke off home. Waiting staff have to stay until the last customers remember they have a home to go to. Not funny at 2am! And then they forget to leave a tip!

    Seriously, you do raise a good point, cosmos. There was a time when the Maitre d' ruled the roost in a restaurant or hotel dining room. Now they're almost always overshadowed by the kitchen, if indeed they exist at all in many places.
