Gluten free lunch ideas

    I need to cook up a gluten free lunch on Saturday. I have ideas but some more inspiration would be helpful.

    I was thinking lime meringues with lime curd for pud. It is lovely but I think I always do meringues for these friends!

    Lemon posset and berries.
    Banoffee pie using GF biscuit base.

    I might borrow that one @primarycat . I've been back on gluten for the past month but have got a gastroscopy planned for Wednesday and will be going gluten free again after that. What about a fruit compote. I'm planning doing this for two of my favourite men on Friday without the creams but with shortbread biscuits
    We'll have that after chicken with rice a la Jamie Oliver

    My fussy friend might find the pressed chocolate cake too sweet but my Mum will love it. Lemon posset with fresh berries is a great idea. Easy and quick too!

    I was planning a chicken tray bake but that Jamie Oliver one is more summery than the one I was thinking of. Cheers all.
