Desserts etc for NYE

    I am looking for desserts I can make at least the day before, as I doubt I will have time on the day. How long does roulade stay crisp?

    A roulade should be fine. With a good sugar coating it stays crisp for a couple of days. You could vary it by making small meringues and serving them sandwiched with whipped cream and a fruit curd. I have done lemon, Clementine and lime, all work well. All parts could be made in advance and would not take long to assemble.

    A trifle improves with being made the day before. Other suggestions that can be made in advance:
    • Creme brulees
    • Possets
    • Mousses
