Chocolate Banana Bread

  1. This recipe arrived in the veg bag earlier; thought as it was a bit different I'd share it. Will definitely be making it once Lent is over (only 8 days until Good Friday - not that I'm counting!)

    3 very ripe bananas mashed
    75g golden caster sugar
    75g honey or agave syrup
    225g coconut milk
    250g plain flour
    1/2 tsp bicarb
    1/2 tsp salt
    1/2 tsp cinnamon
    100g drak chocolate chopped
    Optional: cardamon pods crushed, 1/2 tsp freshly grated ginger, 50g toasted chopped nuts, 100g dark chocolate, 50g coconut milk

    Preheat over to Gas 4 / 180 degrees.
    Brush loaf tin with oil, and dust with flour.
    Mix all ingredients together, including optional ginger. Fold chocolate, and nuts if using, in last. Tip mix into tin. Bake for 40-50 mins. Cool for at least ten mins.
    Optional topping: melt 100g chocolate with 50g coconut milk. Drizzle over cake, Scatter with nuts/cardamon.
    Allegedly makes 8 fat slices!
    Only complaint I have is it doesn't say what size loaf tin, but I'm guessing 1lb.
