Cert Ed Project - Help! Teaching within a commercial environment?

  1. Dear All; HELP!


    I am in the final stages of my Cert Ed and due to a major role change find
    myself wishing to change the subject for my Cert Ed project at the last minute.


    I want to make this change as my new role has identified a range of issues
    which I feel need addressing and doing this via my project would have a 'two
    birds - one stone effect'; very beneficial for myself and the future of the
    facility I now find myself managing.


    To give you a little background, I work in a catering and hospitality
    department within a large FE college. Over the course of the summer (2011) the
    college developed a new 'training' restaurant facility within a major new local
    event venue.


    Over the past few months there have been a few niggles and I took over the
    lecturing responsibility last week.


    In my opinion the main problems have arisen due to the fact that the
    restaurant has been set up on an almost entirely commercial basis. There is not
    currently decent provision for assessment and feedback, thus limiting learning.



    Now my question........... Does anyone have any experience of setting up a
    'college business' within a larger organisation, with all the commercial
    pressures that setting up any business involves, but has been able to
    effectively place teaching, learning and assessment at the centre of that
    business? Do you know of any previous research that mirrors this model,
    regardless of the actual nature of the business?


    Any help, ideas or pointers would be very much appreciated!
