Any alternative lasagne recipes?

    My lovely missus sometimes does a 'Tex-Mex Lasagne', in which she layers chilli con carne, soft corn tortillas and cheese. Additional layers of salsa, soured cream and guacamole optional.
    It sounds like a car crash but it's actually delicious.

    I regularly make spinach, courgette & chorizo lasagne.

    Late response, but I make a 'white lasagne' which involves cooking sausage meat (I buy some nice sausages and skin them) with chestnut mushrooms and porcini mushrooms then mixing both with a béchamel sauce. Layer the sausage/mushroom mixture with lasagne and extra béchamel and top with cheese of your choice (pecorino or Parmesan is good) and bake.

    I also make the sausage/mushroom sauce on its own and serve with tagliatelle.
