Aduki Bean Burger Recipe???!

  1. Years and years ago, I had a cook book that had a brilliant recipe for Aduki bean burgers. I leant the book to someone else, travelled to to the other side of the world, and haven't made them since....

    From what I can remember it involved lots of aduki beans (obviously!) , onion, parsley, tomato paste, oats (????) chopped onion.....

    Does anyone have a good recipe for these?

    I've got an Aduki Bean salad recip

    Aduki Bean rice salad
    4 oz dried aduki beans soaked overnight
    1 mugful long grain brown rice
    2 mugs boiling water
    1 large green pepper, de-seeded and chopped
    2 celery stalks, finely chopped
    1/2 (half) cucumber, diced - leave peel on
    6 spring onions finely chopped, including green parts
    salt and freshly milled pepper
    For the dressing
    4 fl oz olive oil
    1 tablespoon wine vinegar
    1 fat clove garlic, crushed
    1 teaspoon salt
    2 tablespoons finely chopped parsley
    First put the beans in a saucepan together wiht the water in which they were soaked, bring to the boil and cook for 45 mins - 1 hour or until tender.
    Meantime, place the rice with some salt in another saucepan, and add boiling water. Bring to boil, cover and simmer very gently for 40 mins. or until rice is tender and all water absorbed.
    Next, put all ingredients for the dressing in a salad bowl and whisk together.
    Then while the cooked rice and beans (drained) are still warm, empty them into the salad bowl and mix everything together lightly wiht a fork. Leave the salad till cold, then add the chopped vegetables, mixing them in lightly. Taste, and season again if needed. Serve sprinkled with chopped celery leaves.

    Aduki Bean Burgers


    Aduki Bean Burgers

    Makes 6 burger patties

    Prep time: 10 minutes

    Total time: 40 minutes


    2 c cooked aduki beans

    1/4 c vital wheat gluten flour (or flour of choice. this just works nice to hold everything together)

    1/2 green pepper, finely diced

    2 cloves garlic, grated

    1/2 red onion, finely diced

    1/2 tsp sea salt

    1 tbs steak seasoning

    Pre-heat oven to 350 F.

    Mix everything together (use your hands!). Form 6 equal sized patties. Place on a baking sheet lined with parchment paper.

    Bake for 30 minutes, flipping burgers and rotating the tray half-way through.

    Serve on a bun, or in a lettuce wrap.
